The hardest part about outdoor potlucks is deciding on a dish that doesn’t have to remain warmed or chilled. So when I came up with this recipe, I knew it was perfect! (And, by the way, it tasted great too.) You can adjust the recipe depending on the number of of people you want to serve.

Fresh Caprese Salad

Grape or cherry tomatoes, halved
Fresh mozzarella, cut into chunks (or you can use little fresh mozzarella balls)
2 Tbsp red wine vinegar
2 Tbsp balsamic vinegar
1 Tbsp sugar
2 cloves of garlic, chopped
½ cup olive oil
Salt and Pepper, to taste
3 drops of Basil essential oil
3 drops of Lemon essential oil
Basil leaves, chiffonade for garnish

Step 1: Combine tomatoes and mozzarella in a bowl.
Step 2: Combine remaining ingredients (minus the garnish) in a separate bowl then toss into salad.
Step 3: Add garnish and serve
